The things you have to take in mind are:
Resolution - the smallest increment the sensor can show
Accuracy - the accuracy of the measurement, 95% of the time the shown measurement falls into the Actual measurement +- the shown value.
Time constant - How long it takes for the sensor put in a new environment to show 63% an accurate reading
Long-term drift - how much the sensor measurement can drift with time
